I’m not a huge fan of cake and this cake is fairly good but it’s the frosting that makes it the best cake I’ve ever had! I would pick this over a pan of brownies any day!
I didn’t have a great picture of the cake because I’m trying to eat better and making it just to take a picture would have resulted in me eating at least half the pan and that wouldn’t be good for healthy eating :). So this picture is from my 2 year olds birthday party. Not a great one of the cake but Texas Sheet cake really isn’t anything pretty but the taste is to die for!
Texas Sheet Cake
1 cup butter
1/4 cup unsweetened cocoa
1 cup water
2 cups sugar
2 cups flour
1/2 tsp salt
1 cup buttermilk
1 tsp baking soda
2 eggs, beaten
1 tsp vanilla
Preheat the oven to 400 degrees. In a saucepan bring butter, cocoa and water to a boil. Cook. Meanwhile, in a large mixing bowl, combine flour, sugar and salt. Pour cocoa mixture over dry ingredients. Combine buttermilk and baking soda and then add to cocoa mixture along with eggs and vanilla. Mix well. Pour into a 15x10 pan. Bake 20-30 minutes.
Frosting
1/2 cup butter
1/4 cup cocoa
1/4 cup buttermilk
4 cups powdered sugar (we don’t usually use this much)
1 tsp vanilla
dash of salt
Melt butter, cocoa and buttermilk. Stir in powdered sugar (start with 2 cups and you can add more to thicken up). Spread on a warm cake (it’s important it be warm because you want the frosting to be able to melt a bit on the cake.
(We don’t usually seem to have Buttermilk on hand so we substitute 1 T lemon juice to a cup of milk.)
By the way if you want to just make the frosting and eat it or spread it on other things- well I wouldn’t look down on you :).
