I’m up way too early for a Saturday morning but we are headed off for a little weekend trip to my sister’s house to see her new baby so there’s a bit of craziness around the house this morning and while I don’t have time to sit down and eat a nice breakfast that doesn’t mean you can’t and it doesn’t mean I’m completely craving breakfast foods right now (one of my favorite meals of the day). This recipe comes courtesy of my one and only favorite sister-in-law
- 1 1/2 cups flour
- 1/2 cup sugar
- 2 tsp. baking powder
- 1/2 tsp. salt
- 1/4 cup oil
- 1 beaten egg
- 1/2 cup milk
- Crumb topping:
- 1/2 cup brown sugar
- 2 Tbsp. flour
- 2 tsp. cinnamon
These muffins are definitely my favorite...I always make them for breakfast on conference weekend (General Conference- LDS Church). They were originally called coffee cake muffins but I changed it to snicker doodle because they kind of look like snicker doodles on top....and I don't cook with coffee.
