Snicker Doodle Muffins

 

I’m up way too early for a Saturday morning but we are headed off for a little weekend trip to my sister’s house to see her new baby so there’s a bit of craziness around the house this morning and while I don’t have time to sit down and eat a nice breakfast that doesn’t mean you can’t and it doesn’t mean I’m completely craving breakfast foods right now (one of my favorite meals of the day). 806183639_acd58f73b3This recipe comes courtesy of my one and only favorite sister-in-law Smile 

  • 1 1/2 cups flour
  • 1/2 cup sugar
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 1/4 cup oil
  • 1 beaten egg
  • 1/2 cup milk
  • Crumb topping:
  • 1/2 cup brown sugar
  • 2 Tbsp. flour
  • 2 tsp. cinnamon
Mix the dry ingredients in a medium mixing bowl. Mix the wet ingredients in a separate bowl and then, making a well in the dry ingredients, pour the wet ingredients in the well and stir. Alternate layers of batter and topping in a greased muffin tin filling each cup 2/3 full. Bake for 20 minutes.
These muffins are definitely my favorite...I always make them for breakfast on conference weekend (General Conference- LDS Church). They were originally called coffee cake muffins but I changed it to snicker doodle because they kind of look like snicker doodles on top....and I don't cook with coffee.
